Q&A: Biblio food options, name that dish

Each week, we answer reader questions

Q: My wife and I were wondering how Biblio, the new concept by Counter, was going to work. It sounds like you pick a bottle of wine from a list, and then you get food paired with it. We both appreciate the creativity, but don’t really know if the food pairings equate to a full meal. Can we order a number of dishes, say like a 3 course vs 5 course menu? Definitely willing to pay more if extra dishes are offered above the norm. Also, I presume like Counter, food restrictions can be accommodated.
Kristen: Yes, that’s the general idea! These are good questions. The concept of Biblio is unique. You purchase a bottle of wine, and get courses made specifically for the wine you ordered. To answer the easiest question, yes, they can absolutely adjust for dietary restrictions — just be sure to note them when reserving a table. In regards to ordering, you’re correct in that you select a bottle of wine and you’re served three courses to pair with it. If you find that’s not enough and you don’t want to add a second bottle of wine and the food to pair, you can add on additional plates as needed for $15.

Q: Where was this picture taken? Looks delicious!

Kristen: The photo we used on Instagram for this week’s Q&A shoutout was from Omakase by Prime Fish, one of 16 courses Tom enjoyed as part of the restaurant’s special sake dinner: steamed hairy crab with caviar.
