    Cheese Wisdom: A goat cheese with complexity

    A soft center to a firm edge with bright flavor

    The Cheese: Lumberjack Bucheron by Old Chatham Creamery, Groton N.Y.
    Where to Purchase: The Loyalist Market
    Price: $25.99/lb.

    The Style: Soft, creamy center which gets firmer toward the edge with an edible rind. This cheese is a round, 4-inch log.
    Flavor Profile: A bit of goat milk funk at the chalky center, with mellow citrus toward the edge
    How to Enjoy: Crumble onto a salad, in half moon slices with juicy pears, melted onto roasted asparagus or butternut squash

    Wine Pairings: Dry sparkling wine, gruner veltliner, rose, pinot noir, grolleau, zweigelt

    Extra Reading: As this cheese ages, the rind becomes more firm and the center has more crumble.
