    Cheese Wisdom: A sweet spreadable cheese from Norway

    Low-cost cheese created by the frugal wife of a farmer

    The Style: Mocha brown in color, fudge-like texture, spreadable and easy to slice
    Flavor Profile:: Caramel sweetness, cashew, cream

    How to Enjoy: The Norwegians like it thinly sliced on buttered bread. It is very good on thick rye crisp crackers, or served with Gala, Pink Lady or other sweet apple slices. Slice it and add to a grilled cheese sandwich with Gouda. After dinner with a Ruby port or a lightly sweet cider. Cut it into small cubes and add to a cheese plate.
    Wine Pairings: Zinfandel, Cotes du Rhone red, Spätlese Riesling, Malmsey madeira, young ruby port 

    Extra Reading: A blend of goat’s and cow’s milk, this cheese was developed by a farmer’s wife in the mid-1800s in Norway. She had a lot of whey left after making cow’s milk cheese. Being a frugal housekeeper, she decided to mix goat’s milk, cream, and some cow’s milk into the whey, blend/cook the liquid, and age it for a month. The end result was a creamy, thick, sweet cheese. Gjetost must contain at least 10% goat’s milk, with the balance being cow’s milk. It keeps for a long time once you open it – at least three weeks. It is very filling.
