Unpretentious Cooking: Quick Bread Cobbler
Give this recipe a try, even if cooked fruit is not your favorite
Cobblers are a staple summer dessert. The fresh summer fruits bubbling over fluffy dough, soaked with sugary fruit syrup and topped with ice cream, is nostalgic on hot summer nights. The best part of the cobbler, to me, is the sweet dough and the crunchy caramelized top. I am often disappointed that my serving of cobbler is more hot fruit than dough, with little texture. For the record, I have an aversion to hot fruit. This cobbler recipe takes cues from quick breads, giving more structure to hold the fruit and balancing the moisture from the cooked fruit in each bite. Fruit added to this recipe is done two ways: diced and folded into the batter, and sliced and layered on top. The diced fruit melts into the batter, while the sliced fruit on top keeps its structure after cooking. Poppy seeds give texture in every bite, even if it’s a bite of just fruit. Use any fruit, berry, or even chocolate and marshmallows for this cobbler — just follow the measurements as directed. The bake time varies depending on the type of fruit you use; after an hour, regularly check the cobbler and remove from the oven once the center has set. Enjoy the cobbler warm. Quick Bread Cobbler
Ingredients
3 cups flour
2 teaspoons baking powder
2 teaspoons baking soda
½ teaspoon salt
½ teaspoon cinnamon
½ teaspoon cardamom
½ teaspoon allspice
¼ cup poppy seeds
1⅓ cup plain yogurt or buttermilk
2 eggs
6 tablespoons vegetable oil
¾ cups dark brown sugar
2 teaspoons vanilla extract
2 cups diced peaches
1 cup sliced peaches
Directions
- Preheat the oven to 350 degrees.
- Butter a 9-inch oval baking dish or 10.5 x 7 rectangle baking dish and place on a baking sheet.
- In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, cardamom, allspice, and poppy seeds. Make a well in the center of the mixture.
- In a separate medium bowl, combine yogurt, eggs, vegetable oil, brown sugar, and vanilla. Add wet ingredients to the well in the flour mixture and stir until just combined. Gently fold in diced peaches.
- Pour batter into the prepared baking dish and layer the sliced peaches on top. Sprinkle the peaches with granulated sugar. Bake for 60 minutes or until a toothpick inserted in the middle comes out clean. The cobbler should be golden brown. Dust with powdered sugar and serve warm with vanilla ice cream.
