Unpretentious Cooking: Bacon and Cream Cheese Dip
Enjoy this dip on game day
My favorite part of football season are the tailgates and potluck-style food. My grandfather was the same way. His favorite part of game day food was the selection of dips, especially my Aunt’s bacon and cream cheese dip. The original recipe calls for Miracle Whip, but I can’t fathom serving that to people I care for – instead I used Duke’s mayonnaise. The saltiness of the bacon and the bite from the green onions make this dip irresistible. If you want more flavor, add a few tablespoons of bacon fat to the mixture. Make sure to serve with sturdy crackers, chips, or vegetables because the dip is hearty. Remember this recipe when we can go back to watching football in stadiums – it travels well for tailgating.
Bacon and Cream Cheese Dip
Ingredients
2 8-ounce packages of cream cheese, room temperature
½ cup Duke’s mayonnaise
⅓ cup parmesan cheese, grated
½ pound bacon, cooked and chopped
½ cup green onions, thinly sliced
Directions
- In a medium bowl, mix together cream cheese, mayonnaise, and cheese.
- Add bacon and onions and mix until evenly combined.
- Serve immediately with crackers and vegetables. Note: if making ahead and storing in the refrigerator, let the dip come to room temperature before serving.
