Cheese Wisdom: Spreadable, rich cheese

Blend of three different milks to yield a rich creamy delight


THE CHEESE: La Tur Three Milk Cheese from Bosia, Piedmont, Italy
AVAILABLE AT: Whole Foods, $28.99/lb. (one small container is about 1/2 lb.)

THE STYLE: A blend of cow, goat and sheep milks. Very spreadable, creamy, rich, like triple cream brie

FLAVOR PROFILE: This cheese has a bit of funk on the nose, but is very fresh tasting, pudding consistency, and grassy.  

HOW TO ENJOY: Spread on Granny Smith Apples, top with a delicate honey and spread on hearty crackers, in the center of a simple lettuce salad.

WING PAIRINGS: Prosecco, Alsatian Pinot Gris, French Chablis, Beaujolais.

EXTRA READING: The rind is very soft and should be eaten with the center. This cheese is molded then placed in little boxes to age a bit. You will purchase it in the box, which keeps it from spreading as it ages and forms a disc.
