Cheese Wisdom: Spanish goat milk Quesos La Pardina

Semi-soft and delicate


THE CHEESE: Pata Cabra Quesos La Pardina, Aragon, Spain

AVAILABLE AT: Orrman’s Cheese Shop at 7th Street Public Market, $26 per pound

THE STYLE: Goat’s milk cheese that is shaped like a goat leg. Very creamy with low funk factor and washed rind.

FLAVOR PROFILE: A bit tangy, light pungency, citrus notes, spreadable, delicate

HOW TO ENJOY: Cubed and mixed with roasted butternut squash; spread on crisp crackers or toast with garlic confit; with green grapes or mandarin orange

WINE PAIRING: Crisp dry whites, such as pinot gris, Albarino, Rueda.

EXTRA READING: This farm started making cheese in 1989 in the Pyrenees Mountains, close to the border with France. They are passionate about local agriculture, so they built an education center on their farm and host students to teach them about the breadth of foods from this region. They make cow’s milk cheese, goat’s milk, and grow fruits and grains.
