Cheese Wisdom: Creamy and spreadable cow’s milk  

This cheese spreads like butter

The Cheese: Fromager d’Affinois, Pelussin, Rhone Region, France
Where to Purchase: Orrman’s Cheese Shop, The Market at 7th Street
Price: $20/lb.

The Style: Very creamy texture made from cow’s milk. More spreadable than a brie; very similar to butter.
Flavor Profile: Double cream with a hint of cashew, it has a very thin bloomy rind. This is a mild cheese with no funk factor. It has a high fat content.

How to Enjoy:  Serve with figs, apples, prunes, rich crackers or biscuits, pear. Blend into an omelet or scrambled eggs.
Pair With: Champagne or other dry sparkling wine.

Extra Reading: The cheese was developed in 1981 by Jean Claude Guilloteau near the Rhone River. He uses the milk of Holstein and Montbeliardes cows. The fields where the cows graze are rich in various grasses that give the milk a fresh flavor. The cheese is aged two weeks to protect its spreadable texture.
