The Style: Pasteurized cows milk wrapped in a very lemony and beautiful yellow lemon curd
Flavor Profile: The cheese is a bit sharp. It is very young, and it crumbles as you cut into it. When you eat it with the very soft lemon wrap, the lemon curd cuts the sharp notes. It tasted like lemon cheesecake.
How to Enjoy: With fruit such as apple or d’Anjou pear, or sprinkled on a salad of winter greens like kale and mustard greens. Use it as a dessert with fresh raspberries and white chocolate.

Wine Pairings: Fruity reds, creamy white wine, Madeira.
