Cheese Wisdom: A smooth, creamy Gouda from Holland

Versatile cheese pairs with a variety of wines and foods

The Style: Rich semi-solid curd with red wax wrapper.
Flavor Profile: Mild notes of fresh butter, almonds, and cream.

How to enjoy: Cubed and on a cheese board; grated on roasted stuffed peppers with veggies and quinoa; grated onto scrambled eggs.
Wine Pairings: Sparkling Cremant from Alsace; Chenin Blanc or Vouvray white wines; Gamay or California Pinot Noir for red wines.

Extra Reading: Gouda is actually pronounced howda. It originated in the 1500’s in the town of Gouda, Netherlands. The milk used is from small, local farms in that region. There are various styles of Gouda, from supple and creamy, like this one, which is aged for six months, to very crumbly and crystalized Gouda, which can be aged in rounds for seven years or more.
