Cheese Wisdom: Creamy cheddar with a medium bite

The Cheese: Prairie Breeze Cheddar from Milton Creamery, southern Iowa

The Style: A nice crumble, typical cheddar bite, tiny crystals, creamy texture
Flavor Profile: Fresh, clean tasting with almond and grass notes
How to Enjoy: Sprinkle a bit of sweet honey on top, serve with Fuji apple slices and chutney, grate onto scrambled eggs, use in a spinach quiche
Wine Pairings: California chardonnay, merlot, zinfandel, or ruby port

Extra Reading: The Mussar family uses milk from their own cows, as well as small family farms within 30 miles of their farm. They employ 30 people in a very rural part of Iowa where jobs are limited. They have won numerous awards for their cheddar.
