Unpretentious Cooking: Pimm’s Cup Punch
A summer cocktail for cookouts or midweek happy hour
Summer brings a lot of things to be excited about: tomatoes, berries, stone fruit, beach vacations. I like to add a cocktail to the list: Pimm’s cups! The refreshing, gin-based liqueur pops with bright botanicals and pairs nicely on a hot summer day. Sometimes garnished with strawberry and orange slices, but always garnished with cucumber, the British cocktail has become a beloved summer drink. This recipe makes a Pimm’s cup into a punch, staying close to the original recipe for a single serving. Easy to pre-batch and chill before serving, the last step is adding ginger ale and letting guests garnish as desired. If making the punch on a whim, skip chilling in the refrigerator and serve immediately over ice.
Pimm’s Cup Punch
Serves 4-8
Ingredients
1½ cups lemon juice, freshly squeezed
¼ cup simple syrup
9 oz. Pimm’s No. 1
6 cups ginger ale
2-3 strawberries, sliced for garnish
1 orange, sliced for garnish
1 cucumber, sliced lengthwise for garnish
Fresh mint, garnish
Directions
- In a pitcher, stir together lemon juice, simple syrup, and Pimm’s No. 1 until combined. Chill for up to 2 hours in the refrigerator.
- Add ginger ale to the mixture, do not stir. Add strawberry and orange slices.
- Serve immediately in glasses with ice garnished with a cucumber slice and sprig of mint.
