Unpretentious Cooking: Fizzy Plum Margaritas
Skip the mimosa for a brunch margarita
The variety of margaritas seems to be endless. They can be sweet or savory, frozen or on the rocks, happy hour drink or a brunch favorite. The shift from afterwork to morning drink is a newer trend in the last few years and is served with a minor change. Most brunch margaritas have a slight effervescence from the addition of soda water or flavored seltzer. The fizzy bubbles brighten the drink and wake you up. This recipe makes enough for a group of four, allowing everyone two servings. The plum simple syrup is on the sweeter side, so don’t skip the salt. If you are a fan of cilantro, toss a few sprigs in the simple syrup to add a savory note and garnish with a few more sprigs. —Justin Burke
Fizzy Plum Margaritas
Serves 8
Ingredients
1¼ cups plum simple syrup (ingredients follow)
1½ cups lime juice, plus 8 wedges and 8 slices to garnish
12 ounces silver tequila
Soda water or lime seltzer
Salt, to garnish
Small plum wedges, to garnish
Plum simple syrup
2 cups sugar
1 cup water
5 plums, halved and pitted
Directions
- Using a small saucepan on medium-high heat, add water and sugar, stirring constantly, until sugar has dissolved. Add plums and bring to a boil. Reduce heat to low and simmer for 10 minutes. Remove from heat and let cool completely to room temperature. Strain syrup, pressing plums to get their juices. Store syrup in an airtight container in the refrigerator until ready to use.
- In a glass pitcher, stir together simple syrup, lime juice, and tequila.
- Moisten the rim of glasses with lime wedges and dip glass in salt. Fill glasses with ice and add margarita. Top with soda water or lime seltzer and garnish with plum wedges and lime slices.
