    Q&A: PrimeFish Cellar, Dōzo

Each week, we answer reader questions about food and drink in Charlotte

Luxury foods will be available after PrimeFish Cellars converts to a sushi bar, but not as many. TM Petaccia/UP

Q: I read where PrimeFish Cellar will be turning into a sushi bar. Honestly, I’m not sure how to feel about that. Do you know if they will still have take out items and those high-end groceries like caviar and A5 wagyu steaks?
Tom: We reached out to PrimeFish’s Kendra Kong who told us, “A sushi bar and commercial kitchen are being added, but we will still have provisions available at PrimeFish Cellar, just a smaller selection.”

Hand-pulled udon noodles with togarashi-fennel sausage, garlic scapes, yuzu kosho, and chili crunch breadcrumbs at Dōzo. Kristen Wile/UP

Q:  Is Dōzo still closed due to its air conditioning issue? We tried a few times, but it was still closed.
    Tom:
Dōzo Japanese-American Kitchen was forced to shut down for a few weeks last month due to an HVAC failure, but we are happy to report it is back open. If you saw this morning’s newsletter, Kristen called out chef Perry Saito’s hand-pulled udon noodles as her “Don’t Miss Dish” this week.
