    Pastry chef Sam Allen is launching a bakery on wheels

    Wentworth & Fenn’s mobile bakery will sell seasonal macarons.

    Sam Allen is stepping down as pastry chef of The Fig Tree to focus on building her own business, Wentworth & Fenn, and launch a mobile bakery. Her last day at the Elizabeth restaurant will be October 13.

    The timing coincides with the completion of a Wentworth & Fenn camper, which Allen’s wife, Cassie, has been renovating. Allen will sell macarons, baked goods, and coffee out of the camper, which will likely be parked in front of Moxie Mercantile in Plaza Midwood. She may alternate days up in Davidson, too. We’ll share more details when they’re set, but Allen is hopeful the Shasta camper will be up and running in mid-October.

    All of the baking will be done in a commercial kitchen — the Shasta “will just be a selling vessel,” Allen says — though the coffee will be brewed on board. Wentworth & Fenn will sell both Farmers First and Nightflyer Roastworks coffee, as well as a cold brew. The pastry chef will be making seasonal flavored creamers for the coffee, a nice artisan touch.

    As for the baked goods, Allen will sell her signature macarons, each handpainted for added glam. The menu will change every two months.

    “I hope to have a shelf of macarons of seasonal flavors, and then something chocolate, something fruitwise, whether it’s pear or berry,” Allen says. “Always some kind of cookie sandwich, because we do the paint on those. …And then scones, of course.”

    There will also be two or three types of bread for sale.

    In addition to its home base in front of Moxie Mercantile, the Wentworth & Fenn camper will park at pop-ups around town and be available to rent for weddings and private events. Allen will also be teaching at recently opened Sweet Spot Studio, Jossie Lukacik’s baking classes.

    Last week was my bourbon-loving husband Jon’s birthday, and I asked Allen if she could make bourbon-something macarons, which she sells for $2.50 apiece. She created macarons with bourbon buttercream and bourbon caramel filling, decorated with Ohio State (his favorite) colors, which we served with Buffalo Trace bourbons. They were a unanimous hit. Needless to say, we’ll be hitting up her camper pretty often. —Kristen Wile
