    Dot Dot Dot names new chef de cuisine

    Cocktail bar Dot Dot Dot has named Kelly Williams as Chef de Cuisine, replacing executive chef David Quintana. Quintana has taken a position as chef for a financial advisory group to spend more time with his family.

    Williams was most recently at Kindred Restaurant in Davidson. His resume also includes time at New York’s Momofuko and Copehagen’s Amass. He decided to become a chef while in college studying history and music.

    Williams, a Charlotte native, will debut his first menu in March, building on the dishes Quintana left behind until then.

    “I’m really looking forward to working with Stefan and creating a synergistic relationship between the food and the drinks,” Williams says. “Dave built something truly excellent here with regards to the food and the culture in the kitchen and I look forward to the challenge of maintaining the level that he has established and adding my own personal style.” —Kristen Wile
