Executive chef Chris Coleman is leaving Stoke
One of Charlotte’s top chefs is moving to NoDa

Chris Coleman will spend his last day as executive chef at Stoke next week. He’ll be taking over as executive chef at The Goodyear House, a new restaurant in NoDa.
The Goodyear House has been a long-anticipated addition to the neighborhood, and will be in an old mill house on North Davidson’s main stretch. The restaurant will serve small plates that fit Coleman’s cooking style, rife with Southern touches to echo the restaurant’s setting but with global influence.
“Look for plates like pickled shrimp, deviled egg toast and a creamed greens sandwich to be equally snackable and satisfying,” Coleman says. “Shared plates like a beef rib for two will satiate hungrier palates.”
Also signing on to work at The Goodyear House is Sean Potter, who worked at Marriott as director of food and beverage before leaving to become a restaurant consultant.
Coleman has been at Stoke since the restaurant opened. According to Seamus Gallagher of Marriott, there were tears as Coleman announced his departure, but staff wishes him the best.
“It’s an opportunity for us to look at where could we go with this,” he says. “Chef’s been a huge part of this, an integral part of this whole beta project, developing Stoke and Coco and the Director, and certainly we’ll miss him.”
Stoke is currently looking to hire a new executive chef that will oversee Stoke and Coco & the Director. They will hire a separate executive chef to oversee hotel operations. More to come on both restaurants. —Kristen Wile
