Chef changes around the city
The Queen City’s own version of culinary musical chairs

With so many restaurants opening around Charlotte, restaurants have been naming new executive chefs and mixologists regularly. To help you keep track of where your favorites are going, we’ve put together a list of who has gone where over the last several months.
D.J. Ivey, Sea Level N.C.
The seafood restaurant has brought on former Culinary Dropout and Firebirds chef DJ Ivey to be the new executive chef at the Uptown spot.
Serhii Konovalenko, Coquette
Uptown French restaurant Coquette has named its latest in a string of new executive chefs. Konovalenko replaces Santiago Sanchez.
John Cruz, Dot Dot Dot
Following chef Matt Deering’s departure, John Cruz will take the helm at Dot Dot Dot. The cocktail bar has been making a push to improve its culinary reputation this year. They hope to continue that by bringing in the former Biblio chef.
Jonny Cox, SeaBoy
The executive chef of Chapter 6 will leave his position next month to open SeaBoy, a new restaurant in Cornelius.
Vince Giancarlo, Haberdish
While this took place earlier in the year, former The Jimmy chef Vince Giancarlo is now at the helm at Haberdish.
Delaney Wahl, The Jimmy
Giancarlo’s replacement at The Jimmy is chef de cuisine Delaney Wahl.
Clayton Sanders, Flight
Though he may still appear on the schedule as a teacher at Chef Alyssa’s Kitchen in the future, Clayton Sanders has also assumed the role of executive chef at the new Elizabeth wine bar Flight.
Larry Suggs, Jean’s Cold Drinks
Following his departure from cocktail bar Humbug in Villa Heights, Suggs is working on opening his own concept in The Alley at Latta Arcade.
Cristian Mercado, Supperland
The opening executive chef at Coquette is currently a sous chef at Supperland. He will be moving to Leluia Hall as a sous chef once the restaurant opens.
Kinsler Josaime, Mariposa
Following opening chef Jonathan Moore’s tenure as executive chef at Mariposa, several new names have held the title. Currently, Kinsler Josaime is leading the restaurant’s kitchen. Josaime’s resume includes working at Jean Georges, The Matador Room, The Setai Miami, Nobu, Le Petite Maison, and The Fountainbleu in Florida.
Bill Ring, Roosters/SouthPark
Ring assumes the EC position from Bill McTeigue who will be taking the same position at the upcoming Roosters at The Bowl in Ballantyne.
Andy Caswell, Roosters/Uptown
Caswell steps in as the new executive chef after a stint as food and beverage director at Holiday Inn, Rock Hill.
Matt Moore, Vinyl
After successful stints at O-Ku and the now-defunct Vana, Moore is elevating the kitchen at the popular South End/Wilmore bar and restaurant.
Dezere (Dez) McDonald, Angry Ale’s
The longtime Montford bar has brought on a new executive chef: Dez McDonald. The West Meck graduate has a culinary career spanning 30+ years.
Jon Olvera, pop-up
Chef Jon Olvera has left MAS, where he was executive chef, to focus on a pop-up concept.
Brett Faldstein, La-Tea-Da’s Catering
The new executive chef of La-Tea-Da’s Catering will be Brett Faldstein, formerly of Bonnie and Clydes in South Charlotte.
Roderick Howard, The Asbury
Roderick Howard replaces Tim Groody at Uptown restaurant The Asbury inside The Dunhill Hotel.
Kerry Moffett, Good Food on Montford
After a Texas hiatus, Moffett has returned to this Park Road area restaurant.
Paul Ciarfella, Rally
Ciarfella, formerly with the Kindred group, takes over from Joe Rawlings.
Taylor Janiak, Foxcroft/Waverly
The new executive chef was previously at Dean’s Italian Steakhouse.
David Sullivan, The Garrison Cocktail Bar & Restaurant
Sullivan is the new executive chef of the Pineville eatery.
Kyle Gaddas, The Bottle Tree
Previously at Figo36 and The Wine Loft, Gaddas now leads the kitchen at this Belmont restaurant, replacing Colleen O’Hare, who is now at Duckworth’s Grill and Taphouse.
Luis Rojas, The Lights
Original chef/owner Eloy Roy sold the Pineville cafe. Rojas is now the day-to-day chef, previously with Oggi and Ilios Noche.
