Cheese Wisdom: Very creamy, washed-rind cheese from Burgundy
Runny, spreadable center with an edible rind

The Cheese: Gaugry Epoisses Raw Cow’s Milk from Gevrey Chambertin, France

Price: $24/container (about 8 oz.)
The Style: The very soft and somewhat stinky cheese is boxed in round wood containers. It can vary in color from pale ivory to slightly red, depending on age. This producer uses a salty brine with some leftover marc (grape must) to wash the cheese as a preservative.
Flavor Profile: The consistency of soft butter, with flavors of cream, cashew, barnyard, herbs, and light tang. The rind gets wrinkled and sticky as it ages.
How to Enjoy: Take the cheese out of the box, and place the round on a board or plate. Surround with slices of radish, carrot, apple, celery, and crackers or thin slices of baguette and dig in to the smooth, oozy texture.
Wine Pairings: Champagne, Cremant de Bourgogne, chablis, red Burgundy, Beaujolais.
Extra Reading: The Cistercian monks of Burgundy developed the production style for this cheese, and taught the local village women how to make it. This producer is the last one to use raw milk for production.
