    Cheese Wisdom: Spicy cheddar from Wales

    Cheesemaking is seeing a resurgence there

    The Cheese: Red Dragon Welsh Cheddar

    Where to Purchase: The Culture Shop
    Price: $32/lb.

    The Style: Moist cheddar cheese with a spicy note due to the addition of mustard seeds.
    Flavor Profile: Butter, nuts, brown ale, hint of red pepper.

    How to enjoy: This was great as a grilled cheese with some pickles on the side. Good addition to mac and cheese, as it melts easily and integrates into casseroles. On a cheese tray with spicy nuts.
    Wine Pairings: Syrah, zinfandel, Côtes du Rhone red blends, brunello.

    Extra Reading: Cheesemaking in Wales was a thriving business until WWII, when many farms were abandoned, and cattle herds were moved to England. A younger generation of cheesemakers is reemerging in Wales and reviving traditional styles and methods of making cheese.
