Cheese Wisdom: Smooth and creamy Swiss style

A surprising cow’s milk cheese


The Cheese: Holey Cow from Central Coast Creamery, Paso Robles, Calif.

The Style: This is made with ‘holes’ similar to Swiss cheese, but with a very creamy and smooth texture.
Flavor Profile: Very low funk with a hint of Marcona almond and sweet grass butter.

How to Enjoy: Despite its similarity to Swiss cheese, this cheese is aged only two months, so it is semi-soft. Spread it on crackers, pair it with seedless black grapes, sumo oranges, celery, or on a black bean burger.
Wine Pairings: Oregon pinot gris, Swiss white, Alsatian gewurztraminer.

Extra Reading: The short aging time produces a cheese that has softer taste components. I am not a big fan of the usual Swiss cheese available in our markets, so this was a pleasant change. The rind is not edible; this cheese will please the whole family.
