The Cheese: Herve Mons Tomme De Savoie, Savoie, French Alps
Where to Purchase: Whole Foods
Price: $25.99/lb.

The Style: Full-fat cow milk semi-soft cheese with edible grey rind
Flavor Profile: Rich butter, almonds, hint of mushroom and funk

How to Enjoy: Serve with a garlic or onion-based jam; on a cheese board with tiny sweet red grapes or dried apricots; slice and serve with cucumber; melt it a bit and serve with apple slices

Wine Pairings: Beaujolais, pinot blanc, sparkling Cremant de Alsace.

Extra Reading: Tomme is derived from the word Toma, which means ‘cheese made in the mountains’. This cheese was made by farmers in small rounds during the winter. The fat was used to make butter, while the skimmed milk was used to make cheese. Both were critical sources of protein during the cold months. Current production uses full fat milk; the cheese is aged 60 days prior to release.
