The Style: Semi-firm cow’s milk cheese with an edible rind that adds pop to a cheese plate.
Flavor Profile: : Light cashew note, a bit of salt, pepper spiciness, lemon zest, cream.
How to enjoy: Grate on hot linguine with fresh parsley and lemon zest; on a cheese plate with baguette and pickled veggies; with dried fruits and nuts.
Wine Pairings: Barbera d’Alba, Chianti, Pinot Noir, Beaujolais, Viognier, Sicilian white wines.
Extra Reading: The Sartori family moved from Italy to Wisconsin in 1939. The cheese production is run by third generation family members. Their milk is produced on their farm as well as on family farms within 70 miles of their cheesemaking facility. The cheese is aged for 10-12 months in their extensive underground cave system.
