    Cheese Wisdom: Rich with a beautiful orange rind and gold paste

    The Cheese: Grayson, Meadow Creek Dairy, Galax, Va.
    Where to Purchase: The Loyalist Market, Matthews
    Price: $33.99/lb.

    The Style: A full bodied and chewy but tender cow’s milk paste with an edible washed rind.
    Flavor Profile: Hints of butterscotch, caramel, sweet, pecans, and cinnamon.
    How to Enjoy: Use this to make Welsh rarebit; add to a grilled cheese with pickles, tomato and mustard; make a cheese plate with dried apricots and dried blueberries. 

    Wine Pairings: Simple white wines (like picpoul pinet or vinho verde), a California rosé, or a lightly chilled red.

    Extra Reading: The Meadow Creek Dairy in Galax is an award winning cheese producer, and is particularly known for its Grayson cheese. This cheese took years to develop and is inspired by cheeses the producers tasted in Ireland and Wales. The dairy herd has three types of cows. They are located in the higher elevations of the Appalachian Mountains.
