Cheese Wisdom: North Carolina riff on an Italian cheese

Beer and brine wash yields a light, creamy funk

The Cheese: Boxcarr Handmade Cheese’s Lissome, truffle cow’s milk cheese
Where to Purchase: The Culture Shop, Plaza Midwood
    Price $24.99/lb

The Style: Buttery texture dotted with black truffles and a beer malt funk
Flavor Profile: Similar to Italian Taleggio, the truffles add an earthy flavor and aroma that blend well with the soft textured, velvety style
How to Enjoy: I would have enjoyed trying this on roasted green beans or on a black bean burger, but it was so good that we ate it all with crackers.
Wine Pairings: California chardonnay, Roero Arneis white, pinotage

Extra Reading: Boxcarr Handmade Cheese is a family-run, award-winning operation in Cedar Grove, North Carolina. They purchase local cow’s milk from small producers, and their goat milk is from their own herd. They have an apprenticeship program and they contribute cheese to a food bank that helps those in need.
