    Cheese Wisdom: Local cheese keeps getting more creative

    Tasty flavored ricotta caught our attention


     

    Uno Alla Volta (U.A.V.) Ruby Chocolate Amaretto Ricotta

    Available at Orrman’s Cheese Shop, Pasta & Provisions, Matthews Farmers Market, Charlotte Regional Farmers Market Building 2, Earl’s Grocery. Prices range based on product type, $5-$8 per unit

    THE STYLE: Cow’s milk base with reduction of amaretto and ruby chocolate (red chocolate)

    FLAVOR PROFILE: Sweet, creamy, with little pieces of chocolate; almond notes

    HOW TO ENJOY: Spread on a scone or shortcake, top with strawberry slices; serve with roast pork for a sweet and savory contrast; take a spoon and eat it out of the container until it is gone!

    WINE PAIRING: Rich full bodied whites like California chardonnay or viognier; sparkling moscato d’Asti

    EXTRA READING: Zack Gadberry is the cheese maker and proprietor of U.A.V., which translates from Italian to “one at a time.” He is a graduate of Johnson & Wales Charlotte and was a chef at Customshop, Foxcroft Wine Co., and Vivace. He was disappointed in the quality of the mozzarella that was available, so he started to make his own. He then left Vivace to make cheese full time. He and his wife Victoria make and package mozzarella, burrata, ricotta, goat cheese, cream cheese, crème fraîche, yogurt, and cultured butter. Another note: the red chocolate used in this cheese is rare; it is made from ruby cacao beans and is sweet and acidic, with fruit notes.
