    Cheese Wisdom: Gorgonzola that is sweet and delicious

    This is not a dry or funky blue


    The Cheese Gorgonzola Dolce, Piedmont region, Italy

    The Style Cows’ milk cheese inoculated with penicillium roqueforti, which provides long blue veins as the cheese ages.

    Flavor Profile This gorgonzola has a sweet palate because it is aged about 3 months – many blue cheeses are aged much longer, which makes their palate sharp and texture somewhat crumbly. It is smooth and buttery.

    How to Enjoy I used this as a topping on a Stanley Tucci recipe for polenta with tomato sauce. It melted beautifully and complimented the sauce/polenta flavors. Serve it with a mixed cheese board as your soft cheese, dice it into butter lettuce salads, or use it with lemon pasta. 

    Wine Pairings Chianti, Barbera d’Asti, fruity merlot, Rioja crianza, Vin Santo

    Extra Reading Some blue cheeses have a very earthy, funky aroma – this cheese does not have that note. The rind is not edible. Keep it in the cheese paper wrap that comes with it – if you wrap it in plastic wrap, it will lose its texture.
