Flavor Profile: Lemon zest, cashew, cream, salt, good texture
How to Enjoy: Cube the bung (or cone shape) and serve on a salad with greens and mustard-based dressing; use as a dessert cheese, served with blueberry crisp; serve with smoked salmon and Niçoise olives.
Wine Pairings: Sauvignon blanc, chenin blanc, a Mâconnais chardonnay
Extra Reading: This cheese has been made in the Loire Valley for more than 1,000 years. There is a line of goat cream under the wrinkled-looking rind, and the entire piece of cheese, with rind, is fudge-like and edible. How to pronounce: shabby-shoe. Wine drinkers are often aware of the French AOC wine quality rating system. That same system has a cheese version. This cheese is AOC designated, which restricts the region where it can be grazed and produced, and it has to consistently meet high quality standards.
