How to Enjoy: Great for melting onto a burger, grilled cheese, or on eggplant hot off the grill. Serve with slices of high acid apple, like Granny Smith or Braeburn, for a simple dessert, or on a cheese plate with green grapes and salt cured black olives.
Wine Pairings: This is a very flexible cheese, but would do best with an acidic white like pinot grigio or gruner veltliner, Rioja, pinot nero, or merlot.

While Cypress Grove is famous for its goat cheeses, especially Humboldt Fog, it decided to add a sheep milk cheese to its portfolio with the Lamb Chopper from Holland. Holland does not produce a lot of sheep milk cheese; the top sheep milk cheese producer is Spain.
