THE CHEESE: Sweet Grass Dairy Green Hill Double Cream Cow’s Milk (Thomasville, Georgia)

THE STYLE: Soft to medium-soft cheese made from cow’s milk with a light, edible bloomy rind.
FLAVOR PROFILE: Butter fat, spring herbs, orange peel, hazelnut, grass.
HOW TO ENJOY IT: This is a very flexible cheese that is sure to please most palates. Serve slightly warm with crisp pear, blueberries, Marcona almonds, crisp crackers, honey.
WINE PAIRING: Prosecco, vino verde, rosé of pinot noir, Muscadet, or dry Chardonnay will highlight the sweetness of the cheese. Allow the cheese to reach room temperature before serving.
EXTRA READING: The cows that produce this cheese are strictly grass-fed and are moved daily to different farm areas. The flavor profile of the cheese will change throughout the year due to the different flavors in the grass when milked. These cheese discs are poured by hand and aged 3 to 5 weeks before shipping.
