Cheese Wisdom: A mild versatile cheese from North Carolina

Works with everything from burgers to baked potatoes

    by Anita Skogland

Ridgeline, Looking Glass Creamery, Fairview, N.C.

Where to Purchase: The Loyalist Market, Matthews
    Price: $35.99/lb.

The Style: Semi-soft, aged five months from raw cow’s milk has a thin line of vegetable ash running through the round
Flavor Profile: Mild and slightly sweet with notes of cashew and caramel

How to Enjoy: On a cheese board, grated onto a baked potato, stirred into spicy roasted eggplant, thin slices on burgers
Wine Pairings: Rhone blend, Chile merlot, Oregon Pinot Gris, dry apple cider

Extra Reading: Looking Glass uses milk from its own herds of cows and goats. From December to February, it does not milk or produce cheese. This cheese is rubbed with olive oil and paprika as it ages for five months in its cheese cellar, which is three feet underground with 10-inch thick walls. Looking Glass has been in business for 14 years and is located about an hour’s drive south of Asheville.
