Extra Reading: Looking Glass uses milk from its own herds of cows and goats. From December to February, it does not milk or produce cheese. This cheese is rubbed with olive oil and paprika as it ages for five months in its cheese cellar, which is three feet underground with 10-inch thick walls. Looking Glass has been in business for 14 years and is located about an hour’s drive south of Asheville.
