A soft, creamy cow milk cheese from Spain

The Style: Soft, creamy texture. Makes a dramatic presentation if you purchase the entire 1.5 – 2 lb. ‘breast’ shape.
Flavor Profile: Almond paste, buttery, mellow, sweet, with a hint of salt. The rind is edible if the cheese is very young.
How to Enjoy: Melted as in a grilled cheese. On a cheese tray with green grapes, cashews and cornichons. As a dessert cheese with crisp apples, sweet figs, and honey.
Wine Pairings: Oloroso sherry, Albarino, Vinho Verde, Cabernet Franc, Pinot Noir.
Extra Reading: The word Tetilla means nipple in Spanish. The cheese was first made by nuns in a Spanish convent. The milk is from an old heritage breed of cow called rubia gallega, whose daily milk yields are small. The cheese is hand formed, and has the Spanish designation of Denomination of Origin, which means that the volume produced, the shape, and the ingredients all must conform to a strict production code.
