    Cheese Wisdom: A creamy blue wrapped in orange peels

    A great dessert cheese or unique addition to your cheese plate

    The Cheese: Fior d’Arancio Cow’s Milk Blue Cheese

    Where to Purchase: The Culture Shop
    Price: $33.90/lb.

    The Style: A truly unique version of blue cheese. It is creamy, crumbles a bit, with macerated orange peel pressed into the cheese rim.
    Flavor Profile:: Sweet, aromatic, fruity, visually stunning. The blue veins are mild in flavor.

    How to enjoy: Serve with very good quality dark chocolate and unsalted roasted almonds. Add to a cheese plate along with sweet biscuits or ginger cookies.
    Wine Pairings: Oloroso sherry, Moscato d’Asti, Tawny port, Vin Santo, Cremant d’Alsace.

    Extra Reading: Made in Sergio Moro, Oderzo, Treviso, Veneto, Italy, the cheese is made into 5.5 lb. rounds and inoculated with the blue mold. It is then macerated in barrels in a Moscato grape sweet wine called Fior d’Arancio for 30 days. It then rests on wooden planks and is topped with orange peel. The milk comes from the local cooperative near Sergio Moro’s cheesery.
