Cheese Wisdom: 2.5 inches of delicious texture and taste

French goat’s milk cheese that been produced for over 130 years

Price: $13.00/6 oz.

The Style: A 2.5” tall cylinder of raw and pasteurized goat cheese with a grey-white edible skin on the outside and a runny, pure white paste inside. The inside firms up the longer it ages.
Flavor Profile: A bold surprise of texture and taste. Tangy, salty, sweet, grassy,rich, with a light goat milk funk.

How to Enjoy: Spread on crackers, celery, or baguette. If it is very runny, smear it on a plate and top it with sweet orange or yellow cherry tomatoes cut in half and scoop up with a fork.
Wine Pairings: Albarino, Chenin Blanc, Champagne, dry Rose, Vernaccia.

Extra Reading: This cheese started production by a co-op of local farmers in a very rural area of the Dordogne region of France in the late 1800’s. The co-op is now owned by one family. Very few of the mini-cylinders are exported, as there is a small amount of production and the locals like to eat the final product. ‘Chabi’ is the Arabic name for baby goat, adopted by the French to name this diminutive cheese.
