    Cheese Widsom: A Gouda style cheese from Denmark

    Lightly sweet and salty on the palate

    The Style: Semihard, Gouda style of cow’s milk cheese with a salty aroma.

    Flavor Profile: The warehouse is located on the North Sea coast, and salty air permeates the aroma and flavor of the aging cheese. It has a nutty, lightly sweet flavor, and light crystals, which add a bit of crunch.

    How to Enjoy: Slice it up and warm it in a small pot or microwave until runny, as a dip for raw carrots, radishes, or turnips. Use it on a grilled cheese sandwich, or on a charcuterie board with sardines or salami, fig jam, almonds, and briny olives.

    Wine Pairings: White – creamy Chardonnay, Riesling. Red – Merlot, Rioja, Montepulciano d’Abruzzi, Côtes du Rhône.

    Extra Reading: This award-winning cheese is called Vesterhavsost in Danish, and is one of the most popular in Denmark. It is made from organic milk and is aged a minimum of 30 weeks before shipping.
