Quick and easy recipe makes a big impression

Apple butter & cheese straws with Calabrian chili and garlic dip. Matthew Krenz/UP

This time of year is always a turnstile of emotions. Seeing the joy of my children helps me relive my own childhood and can also make me deeply sad that those days are gone. So many people I wish I could sit around the table with aren’t here, and I am still learning how to navigate those thoughts.

For now, the rush leading up to the holidays feels like a time warp that can leave little time to throw something together for an impromptu dinner or brunch. This recipe is quick and easy with a handful of ingredients and has always been a hit for my family. Cheers, to those who have left an impression on us and those we haven’t yet had the fortune of sitting around the table and sharing a meal with. Happy holidays!

Apple Butter Cheese Twists

Serves: 8-12
Ingredients
½ cup Parmesan, shredded
¾ cup sharp cheddar, shredded
1 14 oz. sheet puff pastry, thawed
1 egg
Black garlic finishing salt (optional)

Preheat oven to 375°F.
In a medium bowl, mix the cheese and apple butter until combined.
Unfold your sheet of puff pastry, cut it in half, and spread the apple butter and cheese mixture evenly, leaving a half-inch seam so you can pinch the two ends together.
Brush both sides of the puff pastry with your egg wash.
Score your pastry in ½”- ¾” sections. Holding one side of the pastry, twist until it is uniformly and loosely spiraled from top to bottom.
Place on a baking sheet lined with parchment paper or a silpat and bake until crispy all the way through, 30-40 minutes. If your oven runs hot, you may need to lower the temperature to 350°F.

Calabrian Chili and Garlic Dip

Serves: 8-12
Ingredients
1 8 oz. container chive cream cheese, room temperature
3-4 tbsp. Calabrian chili garlic spread (the jar I get is called a “stir in sauce” found at Whole Foods in the international section)
1 tbsp. lemon zest

Combine all ingredients and serve with apple cheese straws or crackers.
