Cocktail bar Billy Sunday opens next week
The sister concept of Spindle Bar has a standalone space
Billy Sunday, a cocktail bar at Optimist Hall, will finally open its doors next week. A sister concept to Spindle Bar, which serves drinks inside of Optimist Hall, Billy Sunday will be a standalone space in the modern, gray building in the courtyard. It opens to the public on Monday, Feb. 24.
The menu lists a seasonal selection of drinks — such as the Tea Time, a gin cocktail with black tea and lime, and Keep Off the Grass, a tequila-based drink with lime, green bean, dill, and absinthe — and classic drinks. There will also be draft cocktails, and a selection of cocktails made with vintage amari. The Chicago location of Billy Sunday is known for its vintage amaro selection. Guests can also order a “choose your own adventure” bartender’s choice.
