    Cheese Wisdom: Spanish semi-soft chèvre style 

    Firm goat cheese with a bit of funk

    Where to Purchase: Whole Foods Market
    Price: $19.99/lb.

    The Style: Firm with a bloomy edible rind and ripe, firm center. The log makes a lovely presentation.
    Flavor Profile: Citrus, salt, almond, butter
    How to Enjoy: Slightly warm with salami, picholine olives, and tiny marinated hot peppers. Cold, thin slices with daikon radish and honey. Alongside warm honey.

    Wine Pairings: Muscadet, albariño, sauvignon blanc, picpoul, pinot gris

    Extra Reading: Cana de Cabra means “cane of the goat.” This cheese is aged for three weeks, and has a different, more intense flavor than usual French chèvre.
