    Cheese Wisdom: Rich, tangy, unique

    This cow’s milk blue hails from Switzerland


    THE CHEESE: Simme Blue from Walter Treuthard, Lenk, Switzerland
    AVAILABLE AT: Orrman’s Cheese Shop, The Market at 7th Street
    PRICE: $35/lb.

    THE STYLE: Blue cheese from Switzerland is unusual. This is very creamy, similar to Cambozola.

    FLAVOR PROFILE: This cheese is has butter notes and is slightly nutty, with a delicate tartness from the blue mold.

    HOW TO ENJOY: Serve with sliced fresh peaches and unsalted almonds, or gherkin pickles and fried capers.

    WINE PAIRINGS: Refreshing Spanish albariño or French Picpoul de Penet; 20-year-old tawny port.

    EXTRA READING: The alpine valley where this cheese is made is also home a breed of heirloom cattle known as Simmental, known to produce some of the best milk in the country.
