    Quarantined Cooking: Sheet Pan Caesar Salad

    This warm Caesar salad is great for patio dining


    During this time of uncertainty with no end in sight, we’re going to cook with all the ingredients we have. The normal, the random, and those forgotten impulse buys we made a month ago. This is quarantined cooking.

    Making a complete meal on a baking sheet has become the new one-pot cooking method. Baking on a sheet pan gives the meal a familiar grilled flavor without the grill, amplifies the flavors of the spices and vegetables used, and makes a beautiful presentation when served directly off the pan. Plus, it’s less to clean up afterwards. This recipe makes eating a salad a little more fun and is great for dining al fresco with a nice bottle of vinho verde. If you don’t want chicken, you can use salmon and adjust the cooking time accordingly. ––Justin Burke 

    Sheet Pan Caesar Salad

    Ingredients
    4 7-ounce chicken breasts
    Salt and ground black pepper, to taste
    1/2 cup grated parmesan cheese
    1/2  cup asiago cheese
    1/2 cup panko (or preferred breadcrumb)
    3 tablespoons extra-virgin olive oil
    2 tablespoons parsley, chopped
    2 garlic cloves, chopped
    2 large hearts of romaine, halved lengthwise
    4 anchovy fillets packed in oil, drained, chopped (optional)
    1 lemon, cut into 8 wedges
    Caesar dressing 

    Directions 

    1. Preheat the oven to 450 degrees and line a large baking sheet with foil. 
    2. Season chicken with salt and pepper on both sides and place on the prepared baking sheet. 
    3. In a medium bowl, combine cheese, panko, 2 tablespoons oil, parsley, and 1 garlic clove in a medium bowl; season with salt and pepper. Pat panko mixture onto chicken. Roast chicken until crumbs begin to turn golden brown, about 10 minutes.
    4. Meanwhile, drizzle romaine with remaining oil and sprinkle with remaining chopped garlic. Season with salt and pepper. Remove the baking sheet from the oven and place romaine around the chicken. Roast until chicken is cooked through and lettuce is brown around the edges, about 5 minutes. 
    5. Remove from the oven. Drizzle caesar dressing on top of the chicken and lettuce. Garnish lettuce with anchovies and place lemon wedges around the pan.
