Quarantined Cooking: Blueberry Lemonade Spritzer
Kick off summer with a quick berry and citrus cocktail
During this time of uncertainty with no end in sight, we’re going to cook with all the ingredients we have. The normal, the random, and those forgotten impulse buys we made a month ago. This is quarantined cooking.
It is hard to believe that it’s Memorial Day weekend. We skipped over spring this year and are headed into summer free to be outside, but with strongly recommended guidelines. Most of our summer plans have been postponed or changed, but regardless of whether you’re enjoying a day out on the lake or the sun in your backyard, nothing beats a summer day spritzer. Kick off summer with this blueberry lemonade spritzer. You can substitute lime for lemon to add bite to the drink, or use this recipe as a base for other fruit and berry flavored spritzers. Just adjust the simple syrup following our base recipe for any flavor you choose. Enjoy the weekend and shake off the quarantine dust — you deserve it! ––Justin Burke
Blueberry Lemonade Spritzer
Ingredients
1 cup frozen blueberries
2 cups vodka
¾ cup blueberry simple syrup
4 ounces lemon juice
Soda water
Lemon wheels, garnish
Blueberry simple syrup
2 cup water
3 cup sugar
2 cup fresh blueberries
Directions
- Using a small saucepan on medium-high heat, heat water and sugar, stirring constantly, until sugar has dissolved. Add blueberries and bring to a boil. Reduce heat to low and simmer for 10 minutes. Remove from heat and let cool completely to room temperature. Strain syrup, pressing blueberries to get their juices. Store syrup in an airtight container in the refrigerator until ready to use.
- In a glass pitcher, stir together vodka, simply syrup, lemon juice, and club soda. Add ice cubes.
- Divide frozen blueberries among glasses and pour the spritzer over top. Serve with a lemon wedge.
