Q&A: Ham glazes, dye-free Easter eggs

Q: What’s the difference between honing a knife and sharpening it? I just learned these were two different things.
UP: We brought this question to Thomas Richards, owner of The Mobile Stone. He shares that honing is realigning the edge, whereas when sharpening, you’re actually removing steel. If you’re looking to have your knives done professionally, you can have Richards bring his sharpening truck to you for $5 per knife.
Q: Do you know of any ways to dye Easter eggs without using processed dye?
UP: I don’t, so I asked Alyssa Wilen of Chef Alyssa’s Kitchen. She recommended using beets for pink eggs and turmeric or sumac for yellow ones. Color the water with the beets and turmeric or sumac, then soak your boiled eggs in them until they pick up the color.
Q: Last week, you said the Kings Drive market would open on April 10. Is that still happening?
UP: It is. Simpson’s Produce, also known as the Kings Drive market, will open on Friday, April 10. They’re taking additional sanitization steps, like asking staff to wear gloves and putting out hand sanitizer. They are also going to offer produce boxes for $25 that can be picked up curbside.
Q: We’ve been LOVING Justin’s recipes. Is there any chance he can put together an easy glaze for our Easter ham?
UP: They’re so good, aren’t they? Yes! He’s going to put together several of them for you. Stay tuned, the recipe will be posted on Friday.
