    Cheese Wisdom: When goat’s milk and truffles come together

    A creamy, smooth, and mild cheese from southeastern Spain

    The Cheese: The Truffle Kid, Mitica, Murcia, Spain
    Where to Buy: Orrman’s Cheese Shop
    Price: $34/lb.

    The Style: Semi-soft cheese. Allow it to reach room temperature to achieve the full aroma and flavor. The edible rind is coated with truffle paste. The marbling is reminiscent of blue cheese.

    Flavor Profile: A mild tang on the front of the palate, creamy, savory, and a light truffle finish.

    How to Enjoy: On a slice of baguette with fresh strawberry jam, grated onto roast broccoli or asparagus, melted onto roasted baby Yukon gold potatoes, with sweet apple slices or Cotton Candy grapes.

    Wine Pairings: Fruity, earthy reds from Jumilla Spain, such as Monastrell. Also Cava, Grenache, Syrah, Rioja Reserva, Viognier, Ruby Port.

    Extra Reading: The Murcia region of Spain is very dry with somewhat harsh weather conditions. The Mitica brand makes a variety of cheeses in this region, mostly goat’s milk based. Truffle Kid is aged six months and injected with truffle paste during the aging process.
