Cheese Wisdom: Unique, four-milk blend from Holland
Complex flavors and creamy texture

The Style: Creamy, medium-firm texture similar to a young Gouda. Light grassy aroma.
Flavor Profile: There is so much going on in this cheese; it is creamy from the buffalo milk, sweet from the sheep milk, a bit earthy from the goat milk, and nutty, with buttery richness, from the cow milk.
How to Enjoy: Serve with crisp apples or red grapes and sweet biscuit crackers. It is fabulous on a grilled cheese sandwich with some sweet relish or dill pickles. It melts very easily due to the buffalo milk.
Wine Pairings: Any sparkling wine, riesling, chenin blanc, rosé, Beaujolais, a dry style of local muscadine wine
Extra Reading: The Dutch owner of Cheeseland, Jan Kos, saw the artwork of Ivan Mijatovic and found it inspiring. He had considered making cheese from four milks, and the painting expressed what the cheese tasted like in his head. So he worked on making the cheese while collaborating with the artist. He also collaborated with one of his U.S. customers, cheesemonger Andreas Levi of Rainbow Grocery Co-op, who suggested the name “Fourmage.” And an award-winning cheese was born. Consider it for your next cheese board; it is a crowd pleaser.
