    Cheese Wisdom: Two cheeses in one

    A double-milk cheese from America’s cheese state

    The Style: Semi-soft cheese with an artistic appearance and an ash milk divider
    Flavor Profile: : Delicate flavors with cashew and hay

    How to Enjoy: There is goat cheese on one side of the slice, and sheep milk on the other. The goat milk is the lighter color. We recommend enjoying both sides in one bite. Try with dark amber honey drizzled on it. Also works with onion confit and raspberry jam. Cut into small squares and serve with unsalted walnuts. Serve a slice with a simple green salad.
    Wine Pairings:: Full-bodied Chardonnay, Viognier, Merlot, Gamay, Montepulciano

    Extra Reading: Carr Valley Cheese has been in production since 1883. Sid Cook, the president and head cheesemaker, has won numerous awards for its various 50 varieties of cheese. This cheese is a play on the French Morbier, which is also scored through the center with a grape ash line.
