Extra Reading: Tomme is derived from the word Toma, which means ‘cheese made in the mountains’. This cheese was made by farmers in small rounds during the winter. The fat was used to make butter, while the skimmed milk was used to make cheese. Both were critical sources of protein during the cold months. Current production uses full fat milk; the cheese is aged 60 days prior to release.
