This triple cream offering is tangy and earthy
THE CHEESE Kunik from Nettle Meadow Farm, Warrensburg, NY
THE STYLE Triple cream – a ripe, spreadable, creamy, style similar to a triple cream brie – made from 75 percent goat’s milk and 25 percent Jersey cow cream. Kunik means ‘snowball’ in Eskimo.
FLAVOR PROFILE Lemon, tang, mushroom, earthy.
HOW TO ENJOY Serve with white seedless grapes, a mild flavored honey, apricot jam, gherkin pickles, cold smoked salmon. Spread on sturdy crackers, like Wasa, or a baguette slice. And yes, eat the soft white rind.
WINE PAIRINGS Dry sparkling wine, fruit forward rosé, a Spätlese Reisling, or Beaujolais.
