Cheese Wisdom: Goat cheese washed with sour beer

The Style: Goat milk that has a washed rind in a sour beer made from local peaches. It is a medium+ funky on the nose, a bit of musk, hint of tomato and fruit.
Flavor Profile: Creamy and dense texture, similar to a young sheep milk cheese. Cashew, assertive, unique.
How To Enjoy: Serve at room temperature as a spreadable cheese on sourdough, raw carrot slices, or with boiled baby gold potatoes. The rind is edible and very flavorful.
Wine Pairings: This cheese would pair well with a white wine with medium+ body, like a viognier or California chardonnay. Red pairings would include Rioja, barbaresco, merlot, or Cotes du Rhône.
Extra Reading: The creamery is located just west of Lake Michigan, north of Milwaukee. It was a cattle farm that took 6 years to transition from cattle to goats. The creamery won the 2022 Good Food Award and is a winner at national cheese competitions. It is woman-owned and uses sustainable farming practices.
