EXTRA READING The farm is located in eastern, central Spain and has been in continuous use for generations. The female farm owner, Lorena, converted from cow milk production to sheep and has 3,500 sheep dedicated to producing handmade, artisanal cheese on the farm. This cheese is named in memory of her grandfather (abuelo) Ruperto, who was her mentor.
