    THE CHEESE El Abuelo Ruperto Raw Sheep’s Milk, Murcia, Spain

    THE STYLE Medium-firm with a creamy texture. The rind is edible, give it a try.

    FLAVOR PROFILE Earthy, fresh cream, a bit of tang, chanterelles, sweet finish

    HOW TO ENJOY Chop or grate it and mix it into your next batch of macaroni and cheese. Top it with some hot pepper jam and serve with Iberian ham. Serve with olives and salted almonds.

    EXTRA READING The farm is located in eastern, central Spain and has been in continuous use for generations. The female farm owner, Lorena, converted from cow milk production to sheep and has 3,500 sheep dedicated to producing handmade, artisanal cheese on the farm. This cheese is named in memory of her grandfather (abuelo) Ruperto, who was her mentor.
