THE CHEESE: Black Label Kaserei-Champignon Cambozola from Bavaria, Germany

THE STYLE: Similar to a blend of triple cream brie and Gorgonzola, semi firm.
FLAVOR PROFILE: Lightly salty, hint of sweetness and light acidity with a good amount of funky blue aromas
HOW TO ENJOY: Delicious on its own, and would add a good boost to sautéed mushrooms, polenta, or served with roasted green beans and NC trout. Summer fruits with this Cambozola would be a splendid end to a meal.
